Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

If using ground beef, cook until meatballs reach minimum internal temperature, 10-12 minutes.

If using ground turkey, cook until meatballs reach minimum internal temperature, 11-13 minutes.

If using Impossible burger, cook until meatballs reach a minimum internal temperature, of 160 degrees, 10-12 minutes.

1 Prepare the Ingredients
Trim zucchini ends, halve lengthwise, and cut into 1/2” half-moons.
Remove stem, seeds, ribs, and cut bell pepper into 1/4" slices.Cut pepperoni into 1/4" slices.Thinly slice garlic. -
2 Make the Meatballs
In a mixing bowl, thoroughly combine ground pork, panko, half the cheese (reserve remaining for garnish), Italian seasoning, and a pinch of salt. Form mixture into 8 evenly-sized meatballs.
Place a medium non-stick pan over medium-high heat and add 1 tsp. olive oil. Add meatballs to hot pan and sear until browned on two "sides," 2-3 minutes per side.Remove from burner. Transfer meatballs to a plate. Meatballs will finish cooking in a later step.Return pan to medium heat; no need to wipe clean. -
3 Make Sauce and Add Meatballs
Add garlic and pepperoni to hot pan. Stir occasionally until golden and fragrant, 2-3 minutes.
Add tomato sauce and 1/2 cup water. Bring to a simmer.Once simmering, add meatballs. Cover and stir occasionally until meatballs reach a minimum internal temperature of 160 degrees, 7-10 minutes.Remove from burner.While meatballs cook, continue recipe. -
4 Cook the Zucchini and Peppers
Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil. Add zucchini, peppers, and a pinch of salt to hot pan. Stir occasionally until lightly browned and tender, 4-6 minutes.
Remove from burner. Stir in butter until melted. -
5 Finish the Dish
Plate dish as pictured on front of card, garnishing meatballs with remaining cheese. Bon appétit!
