Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Cut potatoes into small wedges
Combine pork, ¼ tsp salt, pinch of pepper, meatloaf seasoning, shallot and garlic in a bowl. Form into 2 small loaves and place on a prepared baking sheet. Bake in a hot oven for 16-18 minutes or until they reach a minimum internal temperature of 165 degrees.
While the meatloaves cook, prepare potatoes.
Toss potatoes with 1 tsp olive oil. ¼ tsp salt and a pinch of pepper. In a medium nonstick pan over high heat, add potatoes and saute until browned all over. Transfer to prepared baking sheet and top with parmesan. Roast in a hot oven until tender and crispy, 14-16 minutes.
In the same pan, coat with pan spray and set over medium high heat. Add jalapenos and cook for 2-3 minutes. Stir in cheese sauce and cream cheese. Stir until cream cheese is melted. Remove from heat.
If sauce thickens up, add 1 tablespoon of water to loosen.
