    Prepare the Ingredients

In a mixing bowl, crumble tofu using hands or a spoon.

    Tear spinach into small pieces.

Carefully massage rice in bag to break up any clumps. Tear a small slit in an upper corner of bag to vent. Place upright in microwave and heat, 45 seconds. Remove rice from packaging.

  2. 2

    Cook the Skillet

Heat a medium non-stick pan over medium heat.

Add 1 tsp. olive oil and diced onions to hot pan. Stir often until onions are soft, 2-3 minutes.

Add rice, spinach, black beans, tofu, and spice rub. Stir often until warmed through and spinach is wilted, 3-4 minutes.

    Remove from burner.

Plate dish as pictured on front of card, drizzling with BBQ sauce and garnishing with cheese. Bon appétit!
