  1. 1

    Prepare the Ingredients

Halve pear lengthwise, core, and cut into 1/8" slices.

    Coarsely chop almonds.

Trim stems off Brussels sprouts and halve vertically (quarter if larger than a ping-pong ball).

Mince cilantro (no need to stem).

    Halve lime and juice.

Combine butter and almonds in a mixing bowl.

In another mixing bowl, combine cilantro and 1 Tbsp. lime juice. Set aside.

Pat chicken breasts dry, and season both sides with seasoning blend.

  2. 2

    Start the Chicken

Place a large non-stick pan over medium heat and add 1 tsp. olive oil.

Add chicken to hot pan and sear on one side until browned, 3-4 minutes.

Transfer chicken to one half of prepared baking sheet, seared side up.

Reserve pan; no need to wipe clean.

  3. 3

Start the Brussels Sprouts and Pears

Return pan used to cook chicken to medium-high heat.

Add Brussels sprouts and pears to hot pan and cook until pears start to brown, 2-3 minutes.

Transfer Brussels sprouts and pears mixture to other half of prepared baking sheet. Spread into a single layer.

  4. 4

    Finish Roasting and Finish Dish

Roast in hot oven until Brussels sprouts are tender and chicken reaches a minimum internal temperature of 165 degrees, 10-12 minutes.

Plate dish as pictured on front of card, placing a dollop of almond butter on chicken, and drizzling side with cilantro-lime dressing. Bon appétit!
