Quarter apple and remove core. Cut into bite-sized pieces.
Trim zucchini ends, halve lengthwise, and finely chop.
Finely chop mushrooms.
Cook the Potatoes
Pierce potatoes all over with a fork and microwave in a microwave-safe bowl until tender, 5-7 minutes. Let cool, 2-4 minutes. Cut into bite-sized pieces.
While potatoes are microwaving, cook apple.
Cook the Apple
Place a small pot over medium heat.
Add sliced apple, 2 Tbsp. water, and apple cider to hot pot. Bring to a simmer and cover, cooking until apples are soft, 3-5 minutes.
Remove lid and continue cooking until water has almost entirely evaporated.
Remove from burner.
Make Stroganoff and Finish Dish
Place a large non-stick pan over medium-high heat with 1 Tbsp. olive oil.
Add zucchini and mushrooms to hot pan and cook undisturbed until lightly browned, 3-4 minutes.
Add turkey and a pinch of salt to hot pan. Break up meat until no pink remains and turkey reaches a minimum internal temperature of 165 degrees, 7-9 minutes.
Stir in ¼ cup water, peas, sour cream, demi-glace, and potatoes. Bring to a simmer and cook, stirring often, until peas are soft, 3-5 minutes.
Plate as pictured on front of card, serving cooked apples on the side. Bon appétit!
