Meatlovers! If using protein, cook in a medium non-stick pan over medium heat with 1 tsp. olive oil.

If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon, pat dry. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Prepare the Ingredients
Coarsely chop walnuts.
Stack sage leaves, roll into a long cylinder, and slice lengthwise to create very thin strips. Mince strips.Mince chives.Mince garlic.Trim ends off beets, peel, and cut into 1/4" dice. Beets are delicious, but tend to stain. Save beets for the end when preparing ingredients, and clean your cutting board after preparing. -
2 Roast the Beets
Place beets on prepared baking sheet. Toss with 1 tsp. olive oil, garlic pepper, and a pinch of salt. Spread into a single layer.
Roast in hot oven until tender, 18-22 minutes.Carefully remove from oven.While beets roast, continue recipe. -
3 Cook the Gnocchi
Line a plate with a paper towel.
Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.Add gnocchi to hot pan. Stir occasionally until tender and golden-brown, 5-7 minutes.Reduce heat to medium-low. Transfer gnocchi to towel-lined plate. Keep pan over medium-low heat; no need to wipe clean. -
4 Make the Sauce
Add butter to hot pan. Stir occasionally until butter smells "nutty," turns golden, and brown flecks appear, 3-5 minutes.
Add garlic and sage. Stir occasionally until garlic is fragrant, 30-60 seconds.Add cream base, shredded cheese, 1 Tbsp. water, and a pinch of salt and pepper. Stir to combine and bring to a simmer. -
5 Add Gnocchi and Finish Dish
Once simmering, add gnocchi and lemon juice to hot pan. Stir often until combined and gnocchi is coated, 1-2 minutes.
Remove from burner.Plate dish as pictured on front of card, topping gnocchi with beets. Garnish with goat cheese (crumbling, if desired), walnuts, and chives. Bon appétit!
