If using steak strips, pat dry, coarsely chop, then separate pieces. Stir occasionally until steak reaches minimum internal temperature, 4-6 minutes. Rest, 3 minutes.

1 Roast the Fries
Cut potatoes into 1/4" fries and pat dry.
Place fries on prepared baking sheet and toss with 1 Tbsp. olive oil, 1/2 tsp. salt, and 1/4 tsp. pepper. Spread into an even layer.Roast in hot oven until browned and tender, 25-30 minutes, tossing once halfway through.Carefully remove from oven and stir in 1/4 the chimichurri seasoning (reserve remaining for filling). Sheet will be hot! Use a utensil.While fries roast, continue recipe. -
2 Prepare Ingredients and Make Crema
Hold lettuce at root end and chop coarsely.
Core tomatoes. Halve one tomato lengthwise, then cut into thin half-moons. Cut remaining tomato into 1/4" dice. Keep sliced and diced tomatoes separate.Stem and pick dill.In a mixing bowl, combine sour cream, half the buttermilk-dill seasoning (reserve remaining for filling), 1 tsp. dill, and 1 Tbsp. water. Set aside. -
3 Start the Filling
Place a large non-stick pan over medium-high heat.
Add ground beef to hot, dry pan. Break up meat until no pink remains and beef reaches a minimum internal temperature of 160 degrees, 5-7 minutes.Drain any excess liquid from pan, if desired. -
4 Finish the Filling
Add diced tomatoes, remaining chimichurri seasoning, remaining buttermilk-dill seasoning, 1/2 tsp. salt, and 1/4 tsp. pepper to hot pan. Stir often until combined and tomatoes are tender, 1-2 minutes.
Remove from burner. -
5 Heat Tortillas, Assemble Wraps, and Finish Dish
Wrap tortillas in a damp paper towel. If tortillas come folded, keep folded. Microwave until heated through, 30-60 seconds.
Carefully remove from microwave and transfer tortillas to a clean, flat work surface.Make dinnertime fun! With supervision, have your kid(s) help assemble the wraps. Alternatively, serve fries on the side, if desired.Evenly divide filling, lettuce, sliced tomatoes, fries, and crema among tortillas, placing in center. Fold sides of tortilla toward center, then roll bottom edge towards the top, enclosing sides tightly.Plate dish as pictured on front of card, halving wrap, if desired. Bon appétit!
