If using 20 oz. ground pork, follow same instructions as 10 oz. ground pork, forming four loaves instead of two.

If using ground beef, follow same instructions as ground pork in Steps 1 and 2, baking until beef reaches minimum internal temperature, 25-28 minutes.

If using ground turkey, follow same instructions as ground pork in Steps 1 and 2, baking until turkey reaches minimum internal temperature, 30-35 minutes.

If using Impossible burger, follow same instructions as ground pork in Steps 1 and 2, baking until burger heats through, 28-30 minutes.

1 Prepare the Ingredients
Cut potatoes into 1/2" dice.
In a mixing bowl, combine panko and 2 Tbsp. water. Let sit, 1 minute.After 1 minute, add ground pork, half the salsa (reserve remaining for sauce), taco seasoning, and 1/4 tsp. salt. Thoroughly combine.Form pork mixture into two evenly-sized oval-shaped loaves. -
2 Bake the Potatoes and Meatloaves
Place potatoes on one half of prepared baking sheet and toss with 1 tsp. olive oil, 1/4 tsp. salt, and chile and cumin rub. Spread into a single layer on their side. Place meatloaves on empty half of baking sheet.
Bake in hot oven until potatoes are tender and meatloaves reach a minimum internal temperature of 160 degrees, 20-25 minutes.While potatoes and meatloaves bake, continue recipe -
3 Make the Pico de Gallo
Core and cut tomato into 1/2" dice.
Stem and mince cilantro.In another mixing bowl, combine tomatoes, cilantro, 1 tsp. olive oil, and a pinch of salt and pepper. Set aside. -
4 Make the Queso Sauce
Place a medium non-stick pan over medium heat.
Add softened cream cheese and 1/3 cup water to hot pan. Stir until cream cheese melts, 1-2 minutes.Add shredded cheese and remaining salsa (to taste). Stir constantly until combined and cheese melts, 2-3 minutes.Season with a pinch of salt. Remove from burner. -
5 Finish the Dish
Plate dish as pictured on front of card, topping meatloaf with queso sauce and pico de gallo. Bon appétit!
