Warm yourself up with this veggie chili! Tender mushrooms and hearty black beans fill this dish with lots of flavor. And the creaminess from the melted cheese and cooling sour cream makes it quite perfect we must say.

Meatlovers! If using protein, cook in a medium non-stick pan over medium heat with 1 tsp. olive oil. If using diced chicken breasts, pat dry and stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes. If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes. If using ground pork, break up until pork reaches minimum internal temperature, 5-7 minutes. If using ground turkey, break up until turkey reaches minimum internal temperature, 7-9 minutes. Add to chili as desired.

1 Prepare the Ingredients
Remove stem, seeds, ribs, and cut bell pepper into 1/2" dice.
Cut mushrooms into 1/4" slices.Drain and rinse beans. -
2 Start the Vegetables
Place a medium pot over medium-high heat and add 2 tsp. olive oil.
Add bell peppers, mushrooms, and a pinch of salt to hot pot. Stir occasionally until vegetables are tender, 6-8 minutes. -
3 Start the Chili
Add chile and cumin rub, tomato puree, and flour to hot pot. Stir until well combined and no dry flour remains, 30-60 seconds.

4 Finish the Chili
Add mirepoix base, beans, 1/4 tsp. salt, 1/4 tsp. pepper, and 11/2 cups water to hot pot. Bring to a simmer.
Once simmering, stir occasionally until slightly thickened, 5-7 minutes.Remove from burner. -
5 Finish the Dish
Plate dish as pictured on front of card, topping chili with cheese, sour cream, and tortilla strips. Bon appétit!
