Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

If using antibiotic free chicken breasts, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Prepare the Frites
Cut potatoes into 1/2"-thick frites and pat dry.
Place frites on prepared baking sheet. Top with 2 tsp. olive oil, 3/4 the onion salt (reserve remaining for steaks), and 1/4 tsp. pepper. Massage oil and seasonings into frites. Spread into a single layer. -
2 Roast the Frites
Roast in hot oven, 20 minutes.
Carefully remove from oven. Top frites with half the garlic (prepared in a later step; reserve remaining for mushrooms). Gently flip to coat. Sheet and potatoes will be hot! Use a utensil.Roast again in hot oven until lightly browned and tender, 5-10 minutes.Carefully remove from oven. Toss with truffle oil and parsley (prepared in a later step) and gently flip to coat. Sheet and potatoes will be hot! Use a utensil.While frites roast, continue recipe. -
3 Prepare the Ingredients
Cut mushrooms into 1/4" slices.
Coarsely chop parsley, leaves and stems.Stem and mince thyme.Peel and mince shallot.Mince garlic.Pat steaks dry and season both sides with steak seasoning and remaining onion salt. -
4 Cook the Steaks
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil. Add steaks to hot pan and cook until steaks reach desired doneness, or 4-6 minutes per side for medium/medium-well.
Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.Transfer steaks to a plate and tent with foil. Rest, 3 minutes.Keep pan over medium heat; no need to wipe clean. -
5 Cook Mushrooms and Finish Dish
Add 2 tsp. olive oil, mushrooms, shallots, remaining garlic, 1/2 tsp. thyme, 1 Tbsp. water, and a pinch of salt to hot pan.
Stir often until mushrooms are tender, 2-3 minutes.Remove from burner.Plate dish as pictured on front of card, topping steak with mushrooms. Bon appétit!
