Before You Cook

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Ground Turkey 165° F |

    Prepare The Ingredients

    Halve potatoes lengthwise

    Trim ends off green beans. Cut into 1" pieces.

    Zest and halve lemon. Cut one half into wedges and juice the other half.

    Mince chives

    Halve tomatoes

    Cut ciabatta into 1" pieces

    Roast The Fingerlings and Toast The Ciabatta

    Add vinegar and 1 tablespoon olive oil to a large bowl until completely combined. Add potatoes and a pinch of salt and pepper and toss to combine. Add to prepared baking sheet. Spread into a single layer and roast until golden brown and fork-tender, 22-24 minutes.

    With ten minutes left on the potatoes, place ciabatta pieces on prepared baking sheet and toss with 1 tsp. olive oil. Spread into a single layer and bake until toasted, 8-10 minutes.

    While potatoes cook, start the green beans

    Cook The Green Beans

    Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Add green beans to hot pan and stir occasionally until lightly browned, 4-5 minutes. Cover and cook until green beans are tender, 4-5 minutes.

    Remove lid and add tomatoes and garlic salt. Cook 1-2 minutes. Transfer to a bowl and toss with ciabatta.

    Cook The Mahi

    Halve mahi-mahi fillets into 2 pieces.Place a medium non-stick pan over medium heat and add 2 tsp. olive oil. Add mahi-mahi to hot pan and cook until fish reaches a minimum internal temperature of 145 degrees, 3-5 minutes per side.

    Make Sauce and Finish The Dish

    Combine mayo, 2 tsp lemon juice and chives in a bowl until completely combined.
