    Microwave Instructions

Wash hands thoroughly with soap and warm water before cooking, and after handling raw meat and seafood. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry. Drain beans.

Combine Bolognese sauce, salsa (to taste), and half the taco seasoning (reserve remaining for enchiladas; to taste) in provided tray.

Cover with a damp paper towel. Microwave covered until hot, 1-2 minutes.

While sauce heats, combine beans, corn, remaining taco seasoning, a pinch of salt, and cheese in a mixing bowl. Place tortillas on a clean work surface and top with an even layer of bean mixture. Carefully remove tray from microwave.

Roll tortillas tightly and place in tray, on sauce, seam-side down. Use short side of tray to fit more enchiladas; they should fit snugly.

Cover again with a damp paper towel. Microwave until warmed through, 3-4 minutes.

    Carefully remove tray from microwave.

To serve, top enchiladas with sour cream and sauce from tray. Bon appétit!
