Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Ground Turkey 165° F |
- Ground Pork 160° F

If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes.

If using ground turkey, break up until turkey reaches minimum internal temperature, 6-8 minutes.

If using steak strips, pat dry, coarsely chop, then separate pieces. Stir occasionally until steak reaches minimum internal temperature, 4-6 minutes. Rest, 3 minutes.

1 Prepare the Ingredients
Remove any discolored outer leaves from bok choy and trim ends. Cut stems into 1/4" strips and coarsely chop leaves. Keep stems and leaves separate.
Zest and halve lime. Juice halves.Trim and thinly slice green onions, keeping white and green portions separate. -
2 Start the Pork Mixture
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add ground pork, bok choy stems, and a pinch of salt to hot pan. Break up meat until no pink remains and pork reaches a minimum internal temperature of 160 degrees, 5-7 minutes. -
3 Finish the Pork Mixture
Add cabbage, bok choy leaves, and white portions of green onions to hot pan. Stir occasionally until slightly tender, 2-3 minutes.
Add teriyaki glaze, half the sesame oil (reserve remaining for garnish), cornstarch, a pinch of salt and pepper, and half the lime juice (reserve remaining for rice). Stir occasionally until slightly thickened, 1-2 minutes.Remove from burner.While pork mixture cooks, continue recipe. -
4 Heat the Rice
Carefully massage rice in bag to break up any clumps. Remove rice from packaging. Place rice in a microwave-safe bowl.
Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Rest, 2 minutes.Stir in softened butter, remaining lime juice, lime zest (to taste), and 1/4 tsp. salt. Fluff rice with a fork. -
5 Finish the Dish
To serve, top rice with pork mixture and garnishing with green portions of green onions, sesame seeds, and remaining sesame oil (to taste, if desired). Bon appétit!
