Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

1 Cook the Pasta
Break pasta into large pieces. It's OK if pieces are not even.
Once water is boiling, add pasta and cook until al dente, 8-10 minutes.Reserve 3/4 cup pasta cooking water. Drain pasta in a colander.Briefly run pasta under cold water. Set aside. Reserve pot; no need to wipe clean.While pasta cooks, continue recipe. -
2 Prepare Ingredients and Make Ricotta
Halve and peel onion. Cut halves into 1/4" dice.
Mince garlic.In a mixing bowl, combine ricotta, half the Italian seasoning (reserve remaining for sauce), and a pinch of salt and pepper. Set aside.Remove casing from Italian sausage, if necessary. -
3 Cook the Sausage and Vegetables
Return pot used to cook pasta to medium-high heat.
Add 1 tsp. olive oil and Italian sausage to hot pan. Break into smaller pieces until no pink remains and sausage reaches a minimum internal temperature of 160 degrees, 5-7 minutes.Add onions, garlic, and remaining Italian seasoning. Stir occasionally until tender, 2-3 minutes. -
4 Make the Sauce
Add tomato puree to hot pot and stir constantly, 30 seconds.
Add marinara, reserved pasta cooking water, 1/4 tsp. salt, and 1/4 tsp. pepper. Stir until combined.Add pasta and stir until sauce coats pasta, 1-2 minutes. -
5 Add Cheese and Finish Dish
Top evenly with mozzarella and dollops of ricotta.
Cover and cook undisturbed until cheese is melted, 3-4 minutes.Remove from burner.Plate as pictured on front of card. Bon appétit!
