Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using 16 oz. Italian sausage, follow same instructions as 8 oz., working in batches if necessary. 

  • If using ground beef or Impossible burger, break up until protein reaches a minimum internal temperature of 160 degrees, 4-6 minutes.

    Prepare the Ingredients

    Trim zucchini ends, quarter, and cut into 1/2" dice. Zucchini quantity may vary, but total weight will remain the same. Don't worry; recipe instructions are not impacted.

    Halve and peel onion. Cut halves into 1/4" dice.

    Remove Italian sausage from casing, if necessary.

    Cook the Sausage

    Place a medium pot over medium heat and add 2 tsp. olive oil.

    Add Italian sausage to hot pot. Break into smaller pieces until no pink remains and sausage reaches a minimum internal temperature of 160 degrees, 4-6 minutes.

    Transfer sausage to a plate. Keep pot over medium heat; no need to wipe clean.

    Cook the Vegetables

    Add 2 tsp. olive oil, onions, and carrots to hot pot. Stir occasionally until vegetables are slightly tender, 3-5 minutes.

    Add zucchini and a pinch of pepper. Stir often until lightly browned, 2-4 minutes.

    Add the Broth

    Add 2 cups water, garlic salt, tomatoes, garlic and parsley seasoning, and mirepoix base to hot pot. Bring to a simmer.

    Once simmering, cover and cook until vegetables are tender, 8-10 minutes.

    Add Sausage and Finish Dish

    Add Italian sausage to hot pot and stir occasionally until heated through, 3-4 minutes.

    Remove from burner.

    Plate dish as pictured on front of card, garnishing soup with croutons and cheese. Bon appétit!
