Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Cook the Pasta
Once water is boiling, add pasta and 2 tsp. salt and cook until al dente, 8-10 minutes.
Reserve 1 cup pasta cooking water. Drain pasta in a colander and set aside.While pasta cooks, continue recipe. -
2 Prepare the Ingredients
Halve and peel onion. Cut halves into 1/4" dice.
Mince garlic.Remove Italian sausage from casing, if necessary. -
3 Cook the Vegetables and Sausage
Place a large non-stick pan over medium heat.
Add 1 Tbsp. olive oil and Italian sausage to hot pan and break into smaller pieces.Add carrot and celery blend, onion, garlic, and a pinch of salt. Stir occasionally until vegetables are tender, no pink remains on sausage, and sausage reaches a minimum internal temperature of 160 degrees, 4-6 minutes. -
4 Cook the Ragu
Add tomato puree to hot pan and stir until combined, 60-90 seconds.
Add wine and cook until evaporated, 30-60 seconds.Add crushed tomatoes, chicken broth concentrate, and half the pasta cooking water (reserve remaining to adjust consistency). Bring to a simmer.Once simmering, reduce heat to low. Stir occasionally until slightly thickened, 5-7 minutes. -
5 Add Pasta and Finish Dish
Add pasta and half the Parmesan (reserve remaining for garnish) to hot pan. Gently stir until coated and heated through, 30-60 seconds.
Adjust consistency by adding additional pasta cooking water, 1 Tbsp. at a time, until desired consistency is reached.Remove from burner.Plate dish as pictured on front of card, garnishing with remaining Parmesan. Buon appetito!
