Recipe Steps

    Prepare The Ingredients

    Preheat oven to 425 degrees. Remove lid and label, if necessary. When ingredient appears in recipe, remove from packaging.

    Assemble The Enchiladas

    Place tortillas on a clean work surface. Divide pork, taco seasoning, fajita mix, half the enchilada sauce, ¼ tsp salt and a pinch of pepper evenly between tortillas, placing filling in center of tortilla. Tightly roll tortilla around filling. Place in provided tray in a single layer, seam-side down. Top with cheese.

    Finish The Dish

    Bake uncovered in hot oven until pork reaches a minimum internal temperature of 145 degrees, 25-30 minutes. Carefully remove from oven. Drizzle remaining enchilada sauce on top and garnish with crispy onions. Bon appétit!
