Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    prep

    dice red onion 1/4 inch

    peel and dice apple 1/4 inch

    stem and chop parsley

    pat dry shrimp

    cooking onion relish

    large non stick medium high heat, 2 t oil, add onions, pinch of pepper and sear for 3 minutes

    stir cook 2 more minutes

    add apples cook 2 minutes

    add 2 t water cook for 1 minute, remove from heat wipe pan clean

    making grits

    once water is boiling, whisk in grits with 1/4 t salt, turn heat to medium low and allow to cook covered for 5-7 minutes, stirring every 2 minutes

    once cooked, stir in cream cheese, pecorino and cheddar until melted, add more water by the tablespoon as needed to adjust consistency

    cooking shrimp

    while grits are simmering combine the shrimp with mustard and pretzel breadcrumbs t coat

    in large non stick medium high heat add 2T oil

    sear shrimp on one side for 3 minutes, flip cook another 2-3 until fully cooked

    remove to plate lined with paper towels

    grits, onion relish, shrimp and top with parsley
