Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Start the Rice
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry. Spray provided tray with cooking spray.
Zest and halve lime. Cut one half into wedges and juice the other half.Add rice, peppers, adobo seasoning, 1 tsp. lime juice, 2 tsp. lime zest, 1 cup water, and 1/4 tsp. salt to provided tray. Stir to combine. Spread into an even layer. Cover tray with foil.Bake covered in hot oven until water is fully absorbed, 8-10 minutes.While rice bakes, continue recipe. -
2 Add the Meatballs
In a mixing bowl, combine panko and 2 Tbsp. water. Let rest, 1 minute.
After 1 minute, add ground beef, chile and cumin rub, 1/4 tsp. salt, and a pinch of pepper. Form into 8 evenly-sized meatballs.Carefully remove tray from oven.Add a pinch of salt to rice and push to one side of tray. Tray will be hot! Use a utensil!Add meatballs to now-empty side of tray. -
3 Bake Meal and Make Crema
Bake uncovered in hot oven until meatballs reach a minimum internal temperature of 160 degrees, 20-25 minutes.
While meal bakes, in a microwave-safe bowl, combine crème fraîche, cheese, and 2 Tbsp. water. Microwave until cheese is fully melted, 30-60 seconds.Carefully remove from microwave. Stir to combine.Carefully remove tray from oven. Drain excess liquid from tray, if desired. Tray will be hot! Use a utensil.To serve, top meatballs with cheese sauce and salsa (to taste).
