Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using ground turkey, follow same instructions as ground beef in Steps 2 and 3, baking uncovered in hot oven until meatballs reach minimum internal temperature, 22-25 minutes.

    Start the Rice

    Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry. Spray provided tray with cooking spray.

    Zest and halve lime. Cut one half into wedges and juice the other half.

    Add rice, peppers, adobo seasoning, 1 tsp. lime juice, 2 tsp. lime zest, 3/4 cup water, and 1/4 tsp. salt to provided tray. Stir to combine. Spread into an even layer. Cover tray with foil.

    Bake covered in hot oven until water is fully absorbed, 8-10 minutes.

    While rice bakes, continue recipe.

    Add the Meatballs

    In a mixing bowl, combine panko and 2 Tbsp. water. Rest, 1 minute.

    After 1 minute, add ground beef, chile and cumin rub, 1/4 tsp. salt, and a pinch of pepper. Form into 8 evenly-sized meatballs.

    Carefully remove tray from oven.

    Add a pinch of salt to rice and push to one side of tray. Tray will be hot! Use a utensil!

    Add meatballs to now-empty side of tray. Cover rice side of tray with foil.

    Bake Meal and Make Cheese Sauce

    Bake half-covered (rice covered, meatballs uncovered) in hot oven until meatballs reach a minimum internal temperature of 160 degrees, 20-25 minutes.

    While meal bakes, in a microwave-safe bowl, combine crème fraîche, cheese, and 2 Tbsp. water. Microwave until cheese is fully melted, 30-60 seconds.

    Carefully remove from microwave. Stir to combine.

    Carefully remove tray from oven. Drain excess liquid from tray, if desired. Tray will be hot! Use a utensil.

    To serve, top meatballs with cheese sauce and salsa (to taste). Squeeze lime wedges over to taste. Bon appétit!
