Meat lovers! If using protein cook before vegetables in Step 3, remove to cook vegetables, and return to soup with sweet potatoes. If using whole chicken breasts, pat dry and cut into 1" dice. Season all over with a pinch of salt and pepper. Stir occasionally in hot pot until chicken reaches minimum internal temperature, 5-7 minutes. If using ground turkey, cook with a pinch of salt and pepper, stirring occasionally, until no pink remains and turkey reaches a minimum internal temperature of 165 degrees, 7-9 minutes.
