A note about serious food allergies
The late, great comedian Mitch Hedberg once mused about the mysterious sesame seed, "What does a sesame grow into? I don't know! We never gave them a chance!" Give this sesame-crusted chicken a chance, though, and you'll have yourself a delicious, healthy meal. Lime-ginger dressing over a tender butter lettuce salad packs an acidic punch for the aromatic sesame-crusted chicken breast.

Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Prepare the Chicken
Rinse chicken breasts, pat dry, and season with a pinch of salt and pepper. Coat both sides of chicken with sesame seeds, pressing gently to adhere.
Cook the Chicken
Place a medium oven-safe pan over medium heat. Add 1 Tbsp. olive oil to pan and then add chicken. Cook 4-5 minutes, undisturbed, until white sesame seeds are a light golden brown. Gently flip chicken and place pan in oven. Bake 7-10 minutes, or until chicken reaches a minimum internal temperature of 165 degrees.
Prepare the Ingredients
Zest lime, halve, and juice. Trim and slice radish into 1/8" rounds. Tear leaves of butter lettuce into pieces.
Make the Dressing
In a large mixing bowl, whisk together 1 Tbsp. lime juice, half the lime zest, sugar, soy sauce, ginger, Champagne vinegar, and 2 tsp. olive oil. Season with salt and pepper (to taste). Taste, and add additional lime juice if desired.
Add butter lettuce, radishes, and carrots to vinaigrette and toss to coat.
Plate the Dish
Divide salad between two plates. Slice chicken and place on top. Garnish with remaining lime zest.
