If using antibiotic free chicken, pat dry. Add chicken to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon, pat dry. Add steaks to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

1 Bake the Cheese Crisps
Place cheese on prepared baking sheet and spread into a single layer, about 6x6''.
Bake in hot oven until cheese is fully melted and edges are crispy, 3-4 minutes.Carefully remove from oven and transfer cheese crisps to a plate. Let cool, 4 minutes.Replace foil, if necessary.After 4 minutes, or once cheese crisps are cool enough to handle, break into small pieces using hands.While cheese crisps bake and cool, continue recipe. -
2 Prepare the Ingredients
Halve potatoes lengthwise.
Place potatoes in a microwave-safe bowl and cover with a damp paper towel. Microwave covered until tender, 4-6 minutes.While potatoes microwave, stem Swiss chard. Cut stems into 1/4” slices and coarsely chop leaves.In a mixing bowl, combine Swiss chard, 1 tsp. olive oil, and a pinch of salt. Set aside.Pat chicken dry. Season both sides with rotisserie chicken seasoning and a pinch of salt and pepper.Carefully remove potatoes from microwave. -
3 Start the Vegetables and Chicken
Place potatoes on 1/3 of prepared baking sheet. Toss with 1 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Spread into a single layer on their side.
Place chicken on empty side of sheet and evenly top with 1/2 tsp. olive oil, leaving space in the middle for Swiss chard.Roast in hot oven, 10 minutes.Chicken will finish cooking in a later step.Carefully remove from oven and add Swiss chard to middle of sheet. Spread into a single layer. Sheet will be hot! Use caution. -
4 Finish Vegetables and Chicken, Make Sauce, and Finish Dish
Roast in hot oven until vegetables are tender and chicken reaches a minimum internal temperature of 165 degrees, 8-10 minutes.
Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.While dish roasts, in a mixing bowl, combine onion jam, mayonnaise, and a pinch of salt. Set aside.Carefully remove sheet from oven. Stir softened butter into vegetables until melted and combined. Sheet will be hot! Use a utensil.To serve, top chicken with sauce and garnish with cheese crisps. Bon appétit!
