To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground beef or ground turkey, roast until loaves reach minimum internal temperature, 20-25 minutes.

1 Prepare Ingredients and Make Topping
Cut potatoes into 1" dice and pat dry.
Coarsely chop cilantro; no need to stem.In a mixing bowl, combine cheese spread, half the pesto (to taste; reserve remaining for meatloaves), half the mayonnaise (reserve remaining for meatloaves), and half the red pepper flakes (to taste; reserve remaining for potatoes). Set aside.Place whole garlic cloves and 1 tsp. olive oil on a piece of foil and form a foil pouch around garlic. Set aside. -
2 Add the Potatoes
Place potatoes on prepared baking sheet. Top with 2 tsp. olive oil, half the garlic salt (reserve remaining for meatloaves), and a pinch of pepper. Massage oil and seasonings into potatoes.
Spread into an even layer on one half of baking sheet. -
3 Add the Meatloaves and Garlic
In another mixing bowl, combine panko, ground pork, remaining garlic salt, remaining mayonnaise, remaining pesto (use less if spice-averse), and a pinch of pepper. Form mixture into two equally-sized, oval-shaped loaves.
Place meatloaves on empty side of sheet. Top evenly with pesto-cheese topping (use less if spice-averse).Place garlic pouch in empty corner of baking sheet. -
4 Roast Meal and Finish Dish
Roast meal in hot oven until garlic is softened, 10 minutes.
Carefully remove garlic from oven. Stir potatoes. Sheet will be hot; use a utensil.Return potatoes and meatloaves to hot oven and roast again until potatoes are browned and meatloaves reach a minimum internal temperature of 160 degrees, 10-15 minutes.While potatoes and meatloaves roast, transfer roasted garlic to a clean work surface. Mash with a fork until a paste-like consistency forms. Garlic will be hot! Use caution.Carefully remove sheet from oven.To serve, stir remaining red pepper flakes (to taste), a pinch of salt, cilantro, and mashed garlic into potatoes. Sheet will be hot! Use a utensil.
