Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |

  • Chicken 165° F |

  • Ground Turkey 165° F |

    Prepare the Vegetables and Chicken

    Combine pepper and onion mix, 1 tsp. olive oil, and a pinch of salt and pepper on prepared baking sheet. Spread into an even layer on one side of sheet.

    Pat chicken dry. Place chicken on empty side of sheet. Season both sides with 1/4 tsp. salt and 3/4 the chimichurri seasoning (reserve remaining for tomato feta salad). Top with 1 tsp. olive oil.

    Roast the Vegetables and Chicken

    Roast in hot oven until vegetables are tender and chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes.

    While vegetables and chicken roast, continue recipe.

    Make the Tomato Feta Salad

    Core tomato and cut into 1/2" dice.

    Trim and thinly slice green onions.

    In a mixing bowl, combine tomatoes, feta, green onions, 1 tsp. olive oil, and remaining chimichurri seasoning. Set aside.

    Heat Rice and Finish Dish

    Carefully massage rice in bag to break up any clumps. Remove rice from packaging. Place rice in a microwave-safe bowl.

    Microwave uncovered until heated through, 2-3 minutes.

    Carefully remove from microwave. Rest, 2 minutes.

    Stir tomato feta sauce and a pinch of salt into rice until combined. Fluff with a fork.

    To serve, top chicken with tzatziki and tomato feta salad. Slice chicken, if desired. Bon appétit!
