To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using antibiotic free chicken, pat dry. Add chicken to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using salmon, pat dry. Add salmon, skin-side up first to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Prepare the Potatoes
Place butter in a microwave-safe bowl and cover with a damp paper towel. Microwave covered until melted, 20-30 seconds.
Carefully remove from microwave. Set aside.Slice potatoes into 1/4'' rounds.Place potatoes on 1/3 of baking sheet. Toss with garlic salt, a pinch of pepper, and butter until coated. Shingle potatoes. -
2 Start the Vegetables
Place broccoli in middle of baking sheet. Toss with 2 tsp. olive oil and a pinch of salt. Spread into a single layer in center of sheet.
Roast vegetables in hot oven, 15 minutes.While vegetables roast, continue recipe. -
3 Add Trout and Finish Vegetables
Pat trout dry. Season flesh side with a pinch of salt and lemon n herb seasoning.
After 15 minutes, carefully remove sheet from oven and evenly top potatoes with cheese. Sheet will be hot! Use caution.Place trout on empty side of sheet and evenly top with 1 tsp. olive oil. Sheet will be hot! Use caution.Roast in hot oven until vegetables are tender and trout reaches a minimum internal temperature of 145 degrees, 7-10 minutes.Carefully remove from oven.While trout and vegetables roast, continue recipe. -
4 Make Honey Mustard Cream and Finish Dish
In a mixing bowl, combine creme fraiche and dressing.
To serve, top trout with honey mustard cream. Bon appétit!
