Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground beef, roast until loaves reach minimum internal temperature, 20-25 minutes.

1 Prepare Ingredients and Make Spinach Topping
Peel, trim, and cut carrot into 1/4" slices on an angle. If carrot is larger than 1" in diameter, halve before slicing.
Trim zucchini ends, quarter, and cut into 1" dice.Tear spinach leaves.In a mixing bowl, combine spinach, softened cream cheese, half the Parmesan (reserve remaining for meatloaves), and a pinch of pepper. Set aside. -
2 Assemble the Carrots and Meatloaves
Place carrots on one side of prepared baking sheet and toss with 2 tsp. olive oil. Spread into an even layer on their side.
In another mixing bowl, combine ground turkey, panko, remaining Parmesan, 1/4 tsp. salt, and a pinch of pepper. Form mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height.Place meatloaves on empty side of baking sheet. Evenly top with spinach mixture. -
3 Start Carrots and Meatloaves and Add Zucchini
Roast in hot oven, 8 minutes.
Carefully remove sheet from oven. Stir zucchini, chicken base, bacon, and 1/4 tsp. salt into carrots until combined. Sheet and carrots will be hot! Use a utensil. -
4 Finish Vegetables and Meatloaves and Finish Dish
Roast again in hot oven until vegetables are tender and meatloaves reach a minimum internal temperature of 165 degrees, 12-17 minutes.
Carefully remove sheet from oven.To serve, stir softened butter into vegetables until melted and combined. Slice meatloaf, if desired. Bon appétit!
