1 Prepare the Ingredients
Trim and thinly slice green onions, keeping white and green portions separate.
Coarsely crush crispy jalapeños in shipping bag.In a mixing bowl, combine ground pork, panko, half the taco seasoning (reserve remaining for butternut squash), white portions of green onions, half the salsa (use less if spice-averse; reserve remaining for pesto), and 1/4 tsp. salt.Form mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height. -
2 Start the Butternut Squash and Meatloaves
Place butternut squash, 1 tsp. olive oil, remaining taco seasoning, and a pinch of salt and pepper on one half of prepared baking sheet. Massage oil and seasonings into butternut squash. Spread into an even layer on their side.
Place meatloaves on empty side of sheet.Roast in hot oven, 15 minutes.Meatloaves will finish cooking in a later step.While meal roasts, continue recipe. -
3 Add the Toppings
In another mixing bowl, combine pesto (to taste) and remaining salsa (to taste). Set aside.
After 15 minutes, carefully remove sheet from oven. Stir butternut squash and evenly top with cheese. Sheet will be hot! Use a utensil.Evenly top meatloaves with salsa mixture (use less if spice-averse). Sheet will be hot! Use caution. -
4 Finish Butternut Squash and Meatloaves and Finish Dish
Roast again in hot oven until butternut squash is tender and meatloaves reach a minimum internal temperature of 160 degrees, 5-10 minutes.
Carefully remove from oven.To serve, top butternut squash with green portions of green onions and crispy jalapeños (to taste). Slice meatloaf, if desired. Bon appétit!
