Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Chicken 165° F |

- Ground Turkey 165° F |
- Ground Pork 160° F

1 Prepare the Ingredients
Remove stem, seeds, and ribs, and cut bell pepper into 1/4" slices.
In a mixing bowl, combine ground pork, panko, cheese, and half the taco seasoning (reserve remaining for vegetables). Form into 8 equally-sized meatballs. -
2 Add the Meatballs and Vegetables
Place meatballs on one side of prepared baking sheet.
On empty side of sheet, combine bell peppers, corn, 2 tsp. olive oil, and remaining taco seasoning. Massage oil and seasoning into vegetables. Spread into an even layer on their side. -
3 Roast the Meatballs and Vegetables
Roast in hot oven until vegetables are tender and meatballs reach a minimum internal temperature of 160 degrees, 15-18 minutes.
While meatballs and vegetables roast, continue recipe. -
4 Heat Rice and Finish Dish
Carefully massage rice in bag to break up any clumps. Remove rice from packaging. Place rice in a microwave-safe bowl.
Microwave uncovered until heated through, 2-3 minutes.Carefully remove from microwave. Rest, 2 minutes.Add 1/4 tsp. salt and fluff rice with a fork.To serve, top rice with vegetables and meatballs. Garnish with salsa (to taste), sour cream, and tortilla strips. Bon appétit!
