If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon, pat dry. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

1 Prepare the Ingredients
Stem and mince thyme.
Trim bottom ends from broccolini. Halve larger pieces lengthwise to roughly match smaller pieces.Pat steaks dry and season all over with 1/4 tsp. salt, 1/4 tsp. pepper, and paprika. -
2 Roast the Broccolini
Place broccolini on prepared baking sheet and toss with 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper.
Roast in hot oven until tender, 6-8 minutes.Carefully remove from oven.While broccolini roasts, continue recipe. -
3 Make the Polenta
Place a medium pot over medium heat.
Add half the plain butter (reserve remaining for later in step) and thyme to hot pot.Once butter has turned nutty brown in color and thyme is sizzling, add polenta and stir to coat. Slowly pour in 2 cups water while stirring with a whisk. Stir constantly until starting to thicken, 3-5 minutes.Add remaining plain butter, garlic salt, and Parmesan. Stir until melted and combined, 1-2 minutes.If too thin, continue stirring until desired consistency is reached, 1-3 minutes more.Remove from burner. Season with 1/4 tsp. salt and a pinch of pepper. Cover to keep warm. -
4 Cook the Bacon
Line a plate with a paper towel.
Place a medium non-stick pan over medium-high heat. Add 1 tsp. olive oil and bacon to hot pan. Stir occasionally until crisp, 2-3 minutes.Transfer bacon to towel-lined plate, leaving bacon grease in pan. Keep pan over medium-high heat. -
5 Cook Steaks and Finish Dish
Add steaks to hot pan. Cook until steaks reach desired doneness, or 4-6 minutes for medium/medium-well.
Cook time will vary depending on steak thickness; Gordon recommends checking for doneness sooner.Remove from burner. Rest, 3 minutes.Plate dish as pictured on front of card, topping polenta with broccolini and steak (slice, if desired).Top steak with softened chipotle butter (to taste) and bacon. Bon appétit!
