Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground pork, follow same instructions as ground beef in Steps 1 and 2, baking uncovered in hot oven until pork reaches minimum internal temperature, 16-18 minutes.

If using ground turkey, follow same instructions as ground beef in Steps 1 and 2, baking uncovered in hot oven until turkey reaches minimum internal temperature, 17-20 minutes.

1 Prepare the Beef and Vegetables
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Place diced peppers and tomatoes in provided tray. Top with 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Spread into a single layer.Break up ground beef into small pieces and top vegetables in an even layer. -
2 Add the Corn and Sauce
Bake uncovered in hot oven until ground beef reaches a minimum internal temperature of 160 degrees, 16-18 minutes.
While meal bakes, in a mixing bowl, thoroughly combine cornstarch and 2 tsp. water.Carefully remove tray from oven. Drain excess liquid from tray. Break beef into smaller pieces. Tray will be hot! Use a utensil.Stir in cornstarch mixture, onion salt, half the brown sugar (remaining is yours to use as you please!), BBQ sauce, corn, and 1/4 tsp. salt until combined. -
3 Bake the Meal
Cover tray with foil. Bake covered in hot oven until sauce thickens and vegetables are tender, 18-20 minutes.
While meal bakes, separate leaves of lettuce for cups.To re-crisp lettuce cups, soak in icy, cold water, 5 minutes. Thoroughly dry.Carefully remove tray from oven. Evenly fill lettuce cups with filling.You should have about 5-6 cups total. Layer two lettuce cups for extra crunch and structural support. Lettuce cups are a delicious but messy meal. For this recipe, they can easily be converted to a salad. Simply chop romaine and top with filling after completing steps.To serve, garnish with crispy red peppers. Bon appétit!
