Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    Prep

    Mince shallots

    Cut cauliflower into bite size pieces

    Cook Cauliflower

    In a medium pot, add cauliflower and add enough water to cover. Bring to a boil and simmer until very tender, about 10-12 minutes. Strain and add back to the bowl. Mash with sour cream and goat cheese. Cover and set aside.

    Cook Chicken

    While cauliflower is cooking, heat a medium nonstick pan over medium heat and add 1 tsp olive oil. Sprinkle .25 tsp salt and a pinch of pepper on the chicken. Cook chicken until done. Remove from heat.

    Make Sauce

    In the same pan, add 1 tsp olive oil over medium heat. Add shallots and cook 1 minute. Add demi and jam and stir. Remove from heat immediately.
