Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    Prepare the Ingredients

    Trim ends off green beans. Peel and halve shallot. Slice thinly.

    Bake the Muffins

    In a mixing bowl, combine corn muffin mix, half the cheese, (reserve remaining for topping), jalapeño (to taste), and 4 Tbsp. water. Mix together until a loose batter forms.
    Divide muffin batter evenly into 4 muffin cups of prepared muffin tin. Top muffins with remaining cheese. Bake in hot oven until muffin tops start to crack, 14-17 minutes. While muffins bake, make meatloaves.

    Make the Meatloaves

    In another mixing bowl, thoroughly mix ground beef, seasoning rub, panko, ¼ tsp. salt, and a pinch of pepper. Form into two evenly-sized ovals. Places loaves on one half of prepared baking sheet. Top evenly with half the BBQ sauce (reserve remaining for garnish) and sugar.

    Bake the Vegetables and Meatloaves

    Add green beans and shallot to empty half of baking sheet and toss with 2 tsp. olive oil, ¼ tsp. salt, and a pinch of pepper. Massage oil and seasoning into vegetables. Spread vegetables into a single layer on their side (some overlap is OK). Bake in hot oven until loaves reach a minimum internal temperature of 160 degrees, 20-25 minutes. Remove from oven.

    Plate dish as pictured on front of card, topping meatloaves with remaining BBQ sauce. Bon appétit!
