Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
Steak and Pork 145° F (rest cooked meat, 3 minutes) |

start the potatoes
Cut potato into ½" thick wedges. Pat dry.
Place potatoes on prepared baking sheet and toss with seasoned salt, a pinch of pepper, and 1 Tbsp. olive oil.
Spread into single layer on one side of baking sheet.
Place in oven 15 minutes.
While potatoes cook, prepare the remaining ingredients.

Stem and mince thyme.
Halve and juice lemon.
Peel and halve shallot. Slice thinly.
Trim bottom end from broccolini and cut into 2" lengths.
Combine thyme, mayonnaise, 2 tsp. lemon juice, and a pinch of salt and pepper.
Season steaks with a pinch of salt and pepper.

After potatoes have cooked for 15 minutes carefully flip.
Add broccolini and shallots to other half of prepared baking sheet. Toss with 1 tsp. olive oil and a pinch of salt and pepper.
Place baking sheet in oven and cook 10-12 minutes until broccolini is fork tender.
cook the steaks
Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.
Add steaks to hot pan, and cook until browned and steaks reach a minimum internal temperature of 145 degrees, 5-7 minutes per side.
make sauce and finish the dish
Same pan used to cook steaks add ½ cup water, and cheese spread.
Cook 1-2 minutes, stirring often until cheese is incorporated.
Stir in parmesan and season with a pinch of pepper.
Plate as shown.
