Start the Vegetables
Break broccoli into bite-sized pieces using hands.
In provided tray, combine broccoli, peppers (if you receive a whole bell pepper, cut into 1/2" dice), a pinch of salt, and 1 tsp. olive oil. Spread into an even layer.Bake uncovered in hot oven until tender, 15-20 minutes.While vegetables bake, continue recipe. -
Add the Pork
Pat pork medallions dry and season both sides with a pinch of salt and Asian garlic, ginger & chile seasoning (use less if spice-averse).
If you receive a whole pork tenderloin, pat dry and, on a separate cutting board, slice into medallions, 3/4"-thick.Place a medium non-stick pan over medium-high heat and add 2 tsp. olive oil. Add pork to hot pan and cook undisturbed until browned on one side, 2-3 minutes. Pork will finish cooking in a later step.Remove from burner.Carefully remove tray from oven and push vegetables to one side of tray. Transfer pork, seared-side up, to now-empty side of tray. Tray will be hot! Use a utensil.Top pork and vegetables with sweet and sour sauce, soy sauce, and red pepper flakes (use less if spice-averse). -
Bake Meal and Heat Rice
Bake uncovered in hot oven until vegetables are tender and pork reaches a minimum internal temperature of 145 degrees, 6-8 minutes.
Pork medallion thickness can vary; if you receive a thinner medallion, we recommend checking for doneness sooner.Carefully remove from oven. Rest, 3 minutes.While meal bakes, carefully massage rice in bag to break up any clumps. Remove rice from packaging. Place rice and a 1/4 tsp. salt in a microwave-safe bowl.Microwave uncovered until heated through, 2-3 minutes.Carefully remove from microwave. Rest, 2 minutes.Fluff rice with a fork.To serve, top rice with vegetables and pork. Garnish pork with sauce from tray and sesame seeds. Bon appétit!
