Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    Prepare the Ingredients

    Mince sage. Coarsely chop pecans. Cut ciabatta into ¼" dice. Combine ciabatta and dried cranberries in a large mixing bowl.

    Make the Stuffing

    Place a medium non-stick pan over medium heat. Add butter to hot pan and let melt. Once butter melts, add mirepoix blend and stir occasionally until tender, 3-4 minutes. Add 1 ½ cups water, chicken demi-glace, sage, ½ tsp. salt, and a pinch of pepper. Bring to a simmer. Once simmering, remove from burner. Pour mixture over ciabatta-cranberry mixture and thoroughly combine.

    Bake and Finish the Dish

    Transfer ciabatta-mirepox mixture to a small casserole dish and top with pecans. Bake uncovered in hot oven until top begins to brown, 20-35 minutes. Carefully remove from oven. Bon appétit!
