If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using mahi-mahi, pat dry. Halve any larger pieces to match smaller pieces. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until mahi-mahi reaches minimum internal temperature, 3-4 minutes per side. Fish thickness can vary; if you receive a thinner fillet, we recommend checking for doneness sooner.

If using sirloin steaks, pat dry. Cook in a medium non-stick pan until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

1 Prepare the Potatoes
Quarter potatoes. (If larger than a ping-pong ball, cut into sixths.)
Place potatoes in a microwave-safe bowl and cover with a damp paper towel.Microwave covered until tender, 4-6 minutes.Carefully remove from microwave.Place microwaved potatoes, 1 Tbsp. olive oil, garlic salt, and 1/4 tsp. pepper on prepared baking sheet. Massage oil and seasonings into potatoes. -
2 Prepare Dill and Add Salmon
Push potatoes to one side of sheet.
Stem dill and coarsely chop.Pat salmon dry. Season flesh side with za'atar seasoning, 1/2 tsp. salt, and a pinch of pepper. Place salmon, skin-side down, on now-empty side of sheet. -
3 Roast the Potatoes and Salmon
Roast in hot oven until potatoes are browned and salmon reaches a minimum internal temperature of 145 degrees, 13-15 minutes.
Carefully remove from oven. Stir half the dill (reserve remaining for garnish) into potatoes. Sheet will be hot! Use a utensil.While potatoes and salmon roast, continue recipe. -
4 Make Lemon Crema and Finish Dish
Place butter in another microwave-safe bowl bowl.
Microwave until melted, 20-30 seconds.Carefully remove from microwave. Stir in softened creme fraiche and lemon juice until combined.To serve, top salmon with lemon crema. Garnish potatoes with remaining dill. Bon appétit!
