Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Ground Turkey 165° F |

1 Make the Taco Bowls
Wrap tortillas in a damp paper towel and microwave, 20 seconds.
Carefully remove tortillas from microwave. Spray both sides of tortillas with cooking spray. You may also use 2 tsp. olive oil.Make two loosely-packed, softball-size foil balls, each about 5-6" in diameter. Place foil balls on prepared baking sheet and lay a tortilla over each ball.Bake tortillas in hot oven, 10 minutes.Carefully remove from oven. Gently remove foil ball from tortillas. Bake again, open-side down, until golden and crispy, 3-5 minutes.Carefully remove from oven. Let cool, 5 minutes.While tortillas bake and cool, continue recipe. -
2 Prepare the Ingredients
Core tomato and cut into 1/2" dice.
Hold romaine heart at root end and coarsely chop.In a mixing bowl, combine 2 tsp. olive oil and ranch seasoning. Add romaine and toss to coat. Set aside. -
3 Make the Filling
Place a large non-stick pan over medium heat. Add 2 tsp. olive oil and seitan to hot pan and stir occasionally until seitan is slightly crispy, 2-3 minutes.
Add half the tomatoes (reserve remaining for garnish), half the chile and cumin rub (reserve remaining for cheese sauce), and 1/4 cup water. Stir occasionally until tomatoes release their juices and seitan reaches a minimum internal temperature of 160 degrees, 3-5 minutes.Remove from burner.While filling cooks, continue recipe. -
4 Make the Cheese Sauce
In a microwave-safe bowl, combine remaining chile and cumin rub, cream base, and cheese.
Microwave uncovered until cheese has melted and mixture is bubbling, 30-60 seconds, stirring halfway through.If cheese has not melted, continue microwaving, 30 seconds at a time, as needed. -
5 Finish the Dish
Plate dish as pictured on front of card, filling each taco bowl with filling, cheese sauce, romaine, sour cream, and remaining tomatoes. Bon appétit!
