Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Roast the Potatoes
Cut potatoes into 1/4"-thick wedges and pat dry.
Place potatoes on one prepared baking sheet and toss with 2 tsp. olive oil, garlic pepper, and garlic salt. Spread into an even layer.Roast in hot oven until golden-brown and fork-tender, 30-35 minutes, flipping once halfway through.Carefully remove from oven.While potatoes roast, continue recipe. -
2 Prepare Ingredients and Make Apricot Glaze
Cut broccoli into bite-sized pieces.
Zest and halve lemon. Cut one half into wedges and juice the other half.In a mixing bowl, combine apricot preserves and 1 tsp. lemon juice. Set aside.Pat salmon dry. Season flesh side with fiesta seasoning and 1/4 tsp. salt. -
3 Assemble the Broccoli and Salmon
Place broccoli on 2/3 of second prepared baking sheet and toss with 2 tsp. olive oil, 1/4 tsp. salt, and 1/4 tsp. pepper. Spread into an even layer. Have a little sous chef around? With supervision, have them help massage/season the broccoli.
Place salmon, skin-side down, on empty side of sheet and evenly top with apricot glaze. -
4 Roast the Broccoli and Salmon
Roast in hot oven until broccoli is tender and salmon reaches a minimum internal temperature of 145 degrees, 13-15 minutes.
Carefully remove from oven.While broccoli and salmon roast, continue recipe. -
5 Make Lemon Butter and Finish Dish
In another mixing bowl, combine cheese, softened butter, and 1/2 tsp. lemon zest (to taste). Kids want to help? With supervision, have them help make the lemon butter.
Plate dish as pictured on front of card, topping broccoli with lemon butter. Squeeze lemon wedges over dish to taste. Bon appétit!
