Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using antibiotic free chicken, follow same instructions.

    Start the Sweet Potatoes

    Prick sweet potatoes all over with a fork and place in a microwave-safe plate. Evenly top with 1 tsp. olive oil.

    Microwave uncovered until tender, 10-12 minutes, flipping once halfway through.

    Carefully remove from microwave. Let cool, at least 5 minutes.

    If potatoes need more time, microwave an additional 1-2 minutes at a time, to soften.

    Prepare the Sweet Potatoes

    After 5 minutes, or once cool enough to handle, halve sweet potatoes lengthwise. Scoop potato insides into a mixing bowl, leaving skin intact.

    Add 1/4 tsp. salt, pesto (to taste), and 2/3 the shredded cheese (reserve remaining for topping) to bowl with potato insides. Mash until thoroughly combined. Kids not a fan of extra heat? Feel free to skip/reduce the pesto.

    Evenly fill potato skins with mashed potato mixture.

    Prepare the Chicken

    Coarsely crush tortilla strips. Evenly spread tortilla strips on a plate.

    Pat chicken dry. Season both sides with half the fiesta seasoning (reserve remaining for corn) and 1/4 tsp. salt.

    Evenly spread one side of chicken with half the mayonnaise (reserve remaining for corn).

    Place chicken, mayonnaise-side down, onto plate with tortilla strips, pressing gently to adhere.

    Finish the Sweet Potatoes and Chicken

    Place chicken, tortilla-side up, on one half of prepared baking sheet and spray with cooking spray.

    Place sweet potatoes on empty side of sheet. Evenly top with remaining shredded cheese.

    Roast in hot oven until sweet potatoes are browned and chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes.

    Carefully remove from oven.

    While potatoes and chicken roast, continue recipe.

    Make Elotes-Style Corn and Finish Dish

    Trim and thinly slice green onions, keeping white and green portions separate.

    Halve and juice *lime.

    In another microwave-safe bowl, combine corn and white portions of green onions. Cover with a damp paper towel. Microwave covered until corn is heated through and green onions are slightly softened, 2-3 minutes.

    Carefully remove from microwave. Stir in sour cream, remaining mayonnaise, 2 tsp. lime juice, remaining fiesta seasoning, and 1/4 tsp. salt until combined.

    Plate dish as pictured on front of card, topping corn with cotija and green portions of green onions. Bon appétit!
