If using Impossible burger, follow same instructions as ground beef in Steps 2 and 3, baking uncovered in hot oven until heated through, 20-25 minutes.

1 Prepare the Ingredients
Preheat oven to 425 degrees. Thoroughly rinse any fresh produce and pat dry.
Combine broccoli, cauliflower, and 2 tsp. olive oil in provided tray. Spread into a single layer.Bake uncovered in hot oven until slightly tender, 8-10 minutes.While vegetables bake, make meatballs. -
2 Add the Meatballs
Combine ground beef, panko, and 1/4 tsp. salt in a mixing bowl. Form into six evenly-sized meatballs.
Carefully remove tray from oven. Push vegetables to one side and stir in 1 tsp. olive oil and seasoning blend. Tray will be hot! Use a utensil. Top with half the cheese (reserve remaining for meatballs). In another mixing bowl, combine pesto, marinara, and remaining cheese. Place meatballs in empty space in tray. Top meatballs with pesto-marinara sauce. -
3 Bake the Meal
Bake uncovered in hot oven until meatballs reach a minimum internal temperature of 160 degrees, 20-25 minutes.
Carefully remove tray from oven. Bon appétit!
