If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Prepare the Green Beans
Trim green beans, if necessary.
In a microwave-safe bowl, combine green beans and 2 Tbsp. water. Cover with a damp paper towel.Microwave covered until slightly tender, 4-6 minutes.Carefully remove from microwave and drain any excess liquid.Place green beans in provided tray and toss with 2 tsp. olive oil, garlic pepper, and 1/4 tsp. salt. Push to one side of tray. -
2 Add Pork Medallions and Bake Meal
Pat pork medallions dry. Season all over with rotisserie chicken seasoning and a pinch of salt and pepper.
Place pork in empty side of tray and evenly top with 1 tsp. olive oil. Bake uncovered in hot oven until green beans are tender and pork reaches a minimum internal temperature of 145 degrees, 14-16 minutes.Pork thickness can vary; if you receive a thinner medallion, we recommend checking for doneness sooner.Carefully remove from oven. Rest, 3 minutes.While meal bakes, continue recipe. -
3 Make Sauce and Finish Meal
In another microwave-safe bowl, combine balsamic glaze and fig preserves.
Microwave uncovered until heated through, 30-60 seconds.Carefully remove from microwave. Stir in 1/2 Tbsp. softened salted butter and a pinch of salt until combined.To serve, top pork with sauce and garnish green beans with cheese and almonds. Bon appétit!
