If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.
-
1 Prepare the Chicken
Place panko on a plate and spread into a single layer.
Pat chicken dry. Season both sides with 1/4 tsp. salt and 1/4 tsp. pepper. Evenly top one side with 1 tsp. mustard (reserve remaining for garnish).Place chicken, mustard-side down, onto plate with panko, pressing gently to adhere to one side. -
2 Cook the Chicken

Add chicken to hot pan, panko-side down. Cook until browned and chicken reaches a minimum internal temperature of 165 degrees, 3-5 minutes per side.Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Remove from burner. While chicken cooks, continue recipe. -
3 Prepare the Apple
Quarter apple and remove core. Cut into 1/4" dice.
-
4 Assemble Salad and Finish Dish
In a mixing bowl, combine slaw mix, cabbage, arugula, dressing, apples, cheese (to taste), and a pinch of salt and pepper.
