1 Start the Cauliflower
Break cauliflower into bite-sized pieces using hands.
In provided tray, combine cauliflower, pot roast seasoning, and a pinch of salt and pepper. Spray with cooking spray and spread into an even layer.Bake uncovered in hot oven, 10 minutes.While cauliflower bakes, continue recipe. -
2 Add the Meatloaves
Line a microwave-safe plate with a paper towel. Spread bacon on towel-lined plate.
Microwave until crisp, 1-2 minutes.While bacon microwaves, finely crush crackers.Carefully remove from microwave.In a mixing bowl, thoroughly combine ground beef, crushed crackers, sour cream, garlic salt, half the crispy bacon (reserve remaining for garnish), and 1/4 tsp. pepper. Form meat mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height.After 10 minutes, carefully remove tray from oven and push cauliflower to one side. Tray will be hot! Use a utensil.Transfer meatloaves to now-empty side of tray. -
3 Bake the Meal
Bake uncovered in hot oven until cauliflower is tender and meatloaves reach a minimum internal temperature of 160 degrees, 20-25 minutes.
Carefully remove tray from oven.To serve, top cauliflower with cheese and garnish meatloaf with BBQ sauce and remaining crispy bacon. Bon appétit!
