Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

1 Prepare the Cauliflower
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Wash hands thoroughly with soap and warm water before cooking, and after handling raw meat and seafood. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry.
Break cauliflower into bite-sized pieces. In provided tray, combine cauliflower, garlic pepper, half the garlic salt (reserve remaining for meatballs), and 1/2 tsp. olive oil. Massage oil and seasonings into cauliflower. Push to one side of tray. -
2 Add the Meatballs
In a mixing bowl, combine ground beef, pesto, half the Italian cheese (reserve remaining for topping), remaining garlic salt, and Italian seasoning. Form into 6 equally-sized meatballs and place in empty side of tray. Cover tray with foil.
Bake covered in hot oven, 15 minutes. -
3 Bake Meal and Heat Sauce
Carefully remove tray from oven and drain excess liquid. Stir half the Parmesan (reserve remaining for garnish) into cauliflower. Top meatballs with remaining Italian cheese.
Bake uncovered in hot oven until cauliflower is tender and beef reaches a minimum internal temperature of 160 degrees, 8-12 minutes. While meal bakes, place marinara in a microwave-safe bowl. Cover with a damp paper towel. Microwave covered until hot, 20-30 seconds.Carefully remove tray from oven and marinara from microwave.To serve, garnish cauliflower with almonds and remaining Parmesan. Top marinara with meatballs.
