1 Microwave Instructions
Thoroughly rinse any fresh produce and pat dry. Drain beef and pat dry. Although tenderloin will be pink upon arrival, it has been pre-cooked and simply needs to be heated through.
Stem and tear cilantro leaves. Halve lime. Cut one half into wedges and juice the other half.In provided tray, combine corn and 1 tsp. olive oil. Microwave uncovered until corn is heated through, 1-2 minutes.Carefully remove from microwave. Transfer corn to a mixing bowl. Add beef to now-empty tray and shred with two forks. Add chile and cumin rub and a pinch of salt.Cover tray with a damp paper towel. Microwave covered until beef is heated through, 2-3 minutes.Carefully remove from microwave.Add cilantro, crema, 1 Tbsp. lime juice, and a pinch of salt and pepper to bowl with corn and stir to combine. Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.To serve, fill tortillas with beef, corn mixture, cheese, and crispy jalapeños (to taste). Squeeze lime wedges over to taste. Bon appétit! -
2 Oven Instructions

Add cilantro, crema, 1 Tbsp. lime juice, and a pinch of salt and pepper to bowl with corn and stir to combine. Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.To serve, fill tortillas with beef, corn mixture, cheese, and crispy jalapeños (to taste).
