To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using antibiotic free chicken, pat dry. Add chicken to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Prepare the Ingredients
Prick potatoes all over with a fork.
Place potatoes in a microwave-safe bowl and cover with a damp paper towel. Microwave covered until slightly tender, 5-7 minutes.While potatoes microwave, trim and thinly slice green onions, keeping white and green portions separate.Pick dill.Pat salmon dry. Season flesh side with 1 tsp. olive oil and lemon n herb seasoning.Carefully remove bowl from microwave and transfer potatoes to a clean, flat work surface. Wipe bowl clean and reserve.Using the flat side of an object, press down gently to smash each potato until 1/2" thick. -
2 Make Sauce and Assemble Meal
In reserved microwave-safe bowl, combine cream base, mozzarella, mustard (to taste), white portions of green onions, 1/4 tsp. salt, and a pinch of pepper. Microwave uncovered until heated through, 30-60 seconds.
Carefully remove from microwave and stir to combine. Set aside.In provided tray, combine leeks, potatoes, and sauce. Push vegetable-sauce mixture to one side of tray and evenly top with Parmesan.Place salmon, flesh-side up, in empty side of tray. -
3 Bake the Meal
Bake uncovered in hot oven until sauce is golden-brown and salmon reaches a minimum internal temperature of 145 degrees, 17-22 minutes.
Carefully remove from oven.To serve, top salmon with softened butter and remaining green portions of green onions. Garnish leeks and potatoes with dill. Bon appétit!
