If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Prepare the Shrimp and Squash
Pat shrimp dry. If you receive cooked shrimp, drain thoroughly and pat dry. Follow same instructions and bake uncovered in hot oven, 15-20 minutes.
In provided tray, combine shrimp, squash, 2 tsp. olive oil, 3/4 the Cajun seasoning (use less if spice-averse; remaining is yours to use as you please!), and a pinch of salt and pepper. Spread into an even layer. -
2 Bake the Shrimp and Squash
Bake uncovered in hot oven until shrimp reach a minimum internal temperature of 145 degrees, 20-25 minutes.
Carefully remove from oven. Drain any excess liquid and stir in pesto until combined. Tray will be hot! Use a utensil.While shrimp and squash bake, continue recipe. -
3 Heat Mashed Potatoes, Assemble Slaw, and Finish Meal
Place mashed potatoes in a microwave-safe bowl and vigorously stir to combine. Microwave until heated through, 2-3 minutes.
Carefully remove from microwave and add half the cheese (reserve remaining for garnish). Vigorously stir to combine.While mashed potatoes heat, in a mixing bowl, combine slaw mix, dressing, and a pinch of salt.To serve, garnish mashed potatoes with remaining cheese. Bon appétit!
