Before You Cook

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • Meatlovers! If using protein, cook in a medium non-stick pan over medium heat with 1 tsp. olive oil. 

  • If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

  • If using filets mignon, pat dry. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

  • If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 4-6 minutes per side. 

  • Add protein to meal as desired.

    Prepare the Ingredients

    Cut cauliflower into 1” pieces.

    Hold romaine heart at root end and chop coarsely.

    Core tomato and cut into 1/2" dice.

    Cook the Cauliflower

    Place a large non-stick pan over medium heat and add 2 tsp. olive oil.

    Add cauliflower and piri piri seasoning (to taste) to hot pan. Stir often until browned, 6-8 minutes.

    Remove from burner.

    While cauliflower cooks, continue recipe.

    Heat the Tortillas

    Place a medium non-stick pan over medium-high heat.

    Working in batches if necessary, add tortillas to hot, dry pan. Heat undisturbed, 30-45 seconds per side.

    Remove from burner.

    Make the Blue Cheese Crema

    In a mixing bowl, add half the creme fraiche (reserve remaining for Buffalo spread), half the blue cheese (to taste; reserve remaining for garnish), mayonaise, a pinch of salt and pepper, and 1 Tbsp. water. Stir until thoroughly combined. Set aside.

    Make Buffalo Spread and Finish Dish

    In another mixing bowl, add cream cheese, remaining creme fraiche, Buffalo sauce (to taste), and shredded cheese. Stir thoroughly to combine. Set aside.

    Plate dish as pictured on front of card, spreading Buffalo spread (to taste) on tortillas, then filling with cauliflower. Top with romaine, tomatoes, blue cheese crema (to taste), then remaining blue cheese (to taste). Bon appétit!
