Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using 20 oz. ground pork, follow same instructions as 10 oz. ground pork, working in batches, if necessary.

If using ground beef, follow same instructions as ground pork in Steps 2 and 3, stirring occasionally until beef reaches minimum internal temperature, 10-12 minutes.

If using ground turkey, follow same instructions as ground pork in Steps 2, and 3, stirring occasionally until turkey reaches minimum internal temperature, 11-13 minutes.

Prepare the Ingredients
Cut cauliflower into 1” pieces.
Quarter apple and remove core. Cut into 1/2" slices.Trim and thinly slice green onions on an angle, keeping white and green portions separate. -
Form the Meatballs
In a mixing bowl, combine panko with 2 Tbsp. water. Set aside, 1 minute.
After 1 minute, add ground pork, cheese, garlic salt, and a pinch of pepper to mixing bowl with panko and stir to combine. Form into eight equally-sized meatballs. -
Cook the Meatballs
Spray a medium non-stick pan with cooking spray and place over medium heat.
Add meatballs to hot pan. Roll occasionally until browned all over and meatballs reach a minimum internal temperature of 160 degrees, 10-14 minutes.Remove from burner.While meatballs cook, continue recipe. -
Cook the Cauliflower and Apple
Place a large non-stick pan over medium-high heat. Add 2 tsp. olive oil and cauliflower to hot pan. Stir occasionally until lightly golden, 2-4 minutes.
Add 1/4 cup water, apple, ancho cinnamon rub, and white portions of green onion to hot pan. Cover, and cook undisturbed until tender, 4-6 minutes.Uncover, and cook until water has evaporated and sauce coats vegetables, 1-2 minutes.Remove from burner and stir in half the green portions of green onions (reserve a pinch for garnish). -
Make Sauce and Finish Dish
In another mixing bowl, combine sour cream and mustard.
Plate dish as pictured on front of card, topping meatballs with sauce and remaining green portions of green onions. Bon appétit!
